From Alsace to Ancient Town
Chef Pierre-Emmanuel Fritsch's love for cooking was kindled in his uncle's small restaurant in Strasbourg, Alsace. What began as youthful curiosity — the warmth of the kitchen, the alchemy of transforming simple ingredients into something extraordinary — grew into a lifelong devotion.
Over 28 years, he refined his craft in some of Europe's most celebrated Michelin-starred kitchens, mastering the precision and discipline of classical French cuisine. Yet he always sought something more — a place where tradition could breathe, evolve, and find new expression.
In Vietnam, he discovered not just remarkable ingredients, but a culture that shares his deepest belief: that food is an expression of care, a way of bringing people together, a language that needs no translation.

Respecting the Seasons
We follow the natural rhythm of Central Vietnam's terroir. Our menu changes with the seasons because we believe ingredients have a peak moment — a window when they are at their most flavourful, most alive. We wait for that moment, and we build our dishes around it.
Our Producers
Our relationships with local farmers in Tra Que, fishermen along the Thu Bon River, and artisan producers throughout the region are built on mutual respect and trust. These partnerships ensure that every ingredient that reaches our kitchen meets the highest standards of quality and sustainability.
French Technique, Vietnamese Soul
At the heart of La Table's cuisine lies a delicate balance: the precision and structure of classical French technique, guided by an intuitive understanding of Vietnamese ingredients. This is not fusion for fusion's sake — it is a natural conversation between two great culinary traditions.
